Alfalfa
Medicago Sativa

 

Alfalfa is an Arabic name meaning the father of all foods.  Originally from Persia (Iran), it is one of the earliest know legumes. The Arabs cultivated it thousands of years ago and fed it to their horses to strengthen them. Having produced some of the strongest horses in the world, they tried it themselves and found it very beneficial.

Alfalfa contains almost all known vitamins and minerals. It is especially rich in calcium, phosphorus, iron, potassium, magnesium, silicon, choline, eight essential enzymes, and vitamins A, D, E, B, especially B-6, K, P, and U.

 
Alfalfa also contains protein in higher proportions than beef, milk and eggs:

Alfalfa - 18.9% (vegetable Protein)
Beef - 16.5 % (meat protein)
Eggs - 13.1% (dairy protein)
Milk - 3.3% (dairy protein)
 

The secret of alfalfa's richness is in its roots, which grow as long as 100 feet along the earth, allowing it to absorb more minerals than shallow- rooted plants. It enriches the soil and will improve the yield and quality of any crop planted near it. The calcium in alfalfa is made more accessible by burning the herb and using the ashes. Taken in spoonfuls as a tea, or in soup, it makes an excellent mineral and vitamin supplement. Spouted alfalfa seeds can also be enjoyed in salads.

 

The medicinal uses of alfalfa are numerous and it is one of the safest herbs for the entire family. It has been used successfully in treating rheumatoid arthritis, urinary and bowel problems, and peptic ulcers, because of its vitamin U content. As an aid to digestion it clears the urine and neutralizes acidity, as well as serving as a general tonic. It is one of the best herbs for pregnant women and nursing mothers because of its vitamin and mineral content. It can also be used to aid the body in eliminating toxic chemicals and drugs.Vitamin K, found in alfalfa, was studied by Dr. G. Cheney at Stanford University's Department of Medicine, and was found to lower high blood pressure and protect against hemorrhaging, since vitamin K is known to strengthen the walls of veins and capillaries.
